Ginger Syrup Cream Dirty Soda
Soda fountains have paired ginger and cream since the days of the ice-cream soda. Here a homemade ginger syrup does the work of the bottled stuff, with coconut cream poured over the top for the float-like finish.
Ingredients
- 2 cups chilled sparkling water
- 3 tbsp ginger syrup
- Juice of 1/2 lime
- 3 tbsp coconut cream or half-and-half
- Nugget or crushed ice
- Candied ginger to garnish (optional)
Method
- Fill two glasses with ice and divide the ginger syrup and lime juice between them.
- Top with sparkling water and stir once.
- Float the coconut cream over the top, pouring slowly over a spoon so it ribbons through the soda.
- Garnish with a small piece of candied ginger if you like.
