Soda fountains have paired ginger and cream since the days of the ice-cream soda. Here a homemade ginger syrup does the work of the bottled stuff, with coconut cream poured over the top for the float-like finish.

  1. Fill two glasses with ice and divide the ginger syrup and lime juice between them.
  2. Top with sparkling water and stir once.
  3. Float the coconut cream over the top, pouring slowly over a spoon so it ribbons through the soda.
