Pink Pitaya Sparkler (Dragon Fruit Mocktail)
Dragon fruit — pitaya — gets its electric pink from betalain pigments, the same color family as beets. Freeze-dried into a powder, it's one of the most vivid natural colorants a kitchen has, tinting a glass without any artificial dye.
Ingredients
- 2 tsp dragon fruit (pitaya) powder
- 2 tbsp warm water
- Juice of 1 lime
- 2 tbsp ginger syrup (or honey, to taste)
- 2 cups sparkling water
- Ice
- Lime wheels to garnish
Method
- Stir the dragon fruit powder into the warm water in a small jar until smooth and lump-free — this blooms the color.
- Divide the lime juice and ginger syrup between two ice-filled glasses.
- Pour in the dragon fruit mixture, then top with sparkling water and stir gently.
- Garnish with a lime wheel and serve cold.

Cook's note: Bloom the powder in a little warm water first — added straight to cold soda it can clump. A house-made fruit shrub makes a great swap for the ginger syrup.
