Strawberry Powder Yogurt Bowl
Freeze-drying — the same lyophilization that kept wartime plasma stable and later fed Apollo astronauts — strips the water from ripe strawberries while leaving their color and flavor almost untouched. Stirred into plain yogurt, the powder tints and flavors it in one move, no added liquid.
Ingredients
- 1 cup thick Greek yogurt
- 2 tbsp freeze-dried strawberry powder
- 1 tbsp honey
- 1/4 cup granola
- A handful of fresh strawberries, sliced
- 1 tsp chia seeds
- A few toasted almonds
Method
- Spoon the yogurt into a bowl and stir in the strawberry powder and honey until it turns an even pink.
- If it stiffens, loosen with a splash of milk to a creamy consistency.
- Top with the granola, fresh strawberries, chia seeds, and toasted almonds.

Cook's note: Add the strawberry powder just before eating — it's hygroscopic and will keep its bright color and bloom best when fresh.
