Elderflower & Cucumber Cream Soda
Elderflower cordial is a hedgerow tradition in the English countryside, bottled each spring when the elder trees bloom. Paired with cucumber — the classic garden cooler — it makes a delicate floral soda that's hard to put down.
Ingredients
- 2 cups chilled sparkling water
- 3 tbsp elderflower cordial
- 1/3 cucumber, thinly sliced
- Juice of 1/2 lime
- 2 tbsp coconut cream (optional, for a creamy version)
- Ice
- Cucumber ribbons and a lime wheel to garnish
Method
- Muddle a few cucumber slices gently in the bottom of each glass.
- Add ice, then divide the elderflower cordial and lime juice between the glasses.
- Top with sparkling water and stir.
- For a creamy version, float the coconut cream over the top; garnish with cucumber ribbons and lime.
