Lemon Garlic Roasted Broccoli
Broccoli was bred from wild cabbage by Italian growers and named for the little 'arms' of its florets. Roasted hot and finished with lemon, it turns sweet and crisp at the edges.
Ingredients
- 2 large heads broccoli, cut into florets
- 3 tbsp olive oil
- 4 garlic cloves, sliced
- Salt and pepper
- Zest and juice of 1 lemon
- 1/4 cup grated parmesan
- Red pepper flakes (optional)
Method
- Heat the oven to 425°F. Toss the broccoli with olive oil, garlic, salt and pepper and spread on a sheet pan in a single layer.
- Roast 20–22 minutes, turning once, until deeply browned at the edges.
- Off the pan, toss with lemon zest, lemon juice, parmesan and a pinch of pepper flakes.
