Lúcuma Cream Dirty Soda
Lúcuma, a Peruvian fruit the Inca prized as the 'Gold of the Incas,' tastes of maple, caramel, and sweet potato. Freeze-dried to a powder, it turns a glass of sparkling water into a butterscotch-toned cream soda with no bottled syrup at all.
Ingredients
- 2 cups chilled sparkling water
- 2 tbsp lucuma powder
- 2 tbsp warm water
- 1/4 cup coconut cream
- 1 tsp honey or maple syrup
- 1/4 tsp vanilla extract
- Nugget or crushed ice
Method
- Whisk the lucuma powder into the warm water until smooth to bloom it.
- Stir in the coconut cream, honey and vanilla to make a smooth cream base.
- Fill two glasses with ice and top with sparkling water.
- Spoon the lucuma cream over the top so it swirls down, and stir gently before drinking.
