Lúcuma, a Peruvian fruit the Inca prized as the 'Gold of the Incas,' tastes of maple, caramel, and sweet potato. Freeze-dried to a powder, it turns a glass of sparkling water into a butterscotch-toned cream soda with no bottled syrup at all.

  1. Whisk the lucuma powder into the warm water until smooth to bloom it.
  2. Stir in the coconut cream, honey and vanilla to make a smooth cream base.
  3. Fill two glasses with ice and top with sparkling water.
  4. Spoon the lucuma cream over the top so it swirls down, and stir gently before drinking.
