Strawberries & Cream Powder Fizz
Freeze-dried strawberry powder carries the color and flavor of ripe berries with none of the water, so it tints and flavors a glass in one spoonful. It's the trick that turns plain sparkling water into a strawberries-and-cream soda without a drop of bottled syrup.
Ingredients
- 2 cups chilled sparkling water
- 2 tbsp freeze-dried strawberry powder
- 2 tbsp warm water
- 1–2 tsp honey, to taste
- 3 tbsp coconut cream or half-and-half
- Nugget or crushed ice
- Fresh strawberries to garnish
Method
- Stir the strawberry powder into the warm water with the honey until smooth — this blooms the color and prevents clumping.
- Fill two glasses with ice and divide the strawberry mixture between them.
- Top with sparkling water and stir gently.
- Float the coconut cream over the top and garnish with a fresh strawberry.

Cook's note: Bloom the powder in a little warm water first; stirred straight into cold soda it tends to clump.
