Pomegranate-Mint Shrub Spritzer
Shrubs — fruit steeped in vinegar and sugar — were how American and Persian kitchens kept fruit drinkable long before refrigeration, the tangy syrup splashed into water as a cooler. This spritzer pairs a fruit shrub with pomegranate grenadine for a grown-up, garden-party fizz.
Ingredients
- 2 cups chilled sparkling water
- 3 tbsp fruit shrub (drinking vinegar)
- 1 tbsp grenadine (pomegranate syrup)
- Juice of 1/2 lime
- 6–8 fresh mint leaves
- Ice
- Pomegranate seeds and a mint sprig to garnish
Method
- Gently muddle the mint leaves in the bottom of a shaker or jar to release their oils.
- Add the fruit shrub, grenadine, lime juice and a scoop of ice and stir well.
- Strain into two ice-filled glasses and top with sparkling water.
- Garnish with pomegranate seeds and a sprig of mint.
